The oysters in this consignment have been harvested from an Approved Shellfish Growing Area Classified by SASQAP under the Australian Shellfish Quality Assurance Program.
The Growing Area is remote from human habitation and the shellfish are harvested from oceanic rather than estuarine conditions. However, the shellfish are subject to the strictest monitoring program to ensure the food safety of the product. This includes all post harvest handling procedures, which are audited to meet these and other requirements.
Antibiotics are not used in the production of oysters in South Australia.
The premise of origin of the shellfish has a HACCP based food safety management system in place, which is audited by a third party and supported by Primary Industries and Resources South Australia
